Each drop of Mezcal Dinastía is the reflection of an ancestral legacy, where nature and knowledge merge to give life to a unique beverage. Our artisanal process respects every stage of production, from the selection of the best agaves to the final bottling, taking care of every detail with passion and commitment.

CUT
The beginning of tradition
We select our agaves at their optimum point of maturity, when their sugar concentration is ideal. For the Espadín maguey, this process takes about 8 years. During the harvest, we remove the stalks and preserve the heart of the agave, known as “piña”, the soul of our mezcal.
COOKING
The fire that transforms
Our mezcal is cooked in a conical stone oven underground, using pine and oak wood along with volcanic stones that reach extreme temperatures. After placing the pine cones, they are covered with petate, pencas and earth, allowing the process to last about 6 days. This artisanal method provides the characteristic smoky notes of Mezcal Dinastía.
MILLING
Strength and tradition in each fiber
The cooked pineapples are cut and crushed with a tahona, a huge volcanic stone wheel that extracts the natural sugars from the agave. With this process, we keep alive an ancestral technique that gives identity to our mezcal.
FERMENTATION
The magic of time and environment
The ground agave is deposited in wooden vats where fermentation occurs naturally, without additives or cultivated yeasts. Depending on the climate, this process can take from 6 to 20 days. It is here where the flavors and aromas begin to develop, giving life to the must or “tepache” that will later be distilled.
DISTILLATION
The essence of mezcal
Through a double distillation in copper stills, we extract the pure essence of the mezcal. This process allows us to refine its characteristics, achieving a balance between strength, smoothness and authenticity in each drop.
PACKAGING
The final touch of a masterpiece
Each bottle of Mezcal Dinastía is bottled and labeled by hand, guaranteeing quality in every detail. Overseen by our master mezcaleros, this meticulous process ensures that each sip is a unique and memorable experience.
